In partnership with Floyd County Health Department, Grow Appalachia and UK Extension Service, Appalachian Roots provides cooking classes, using Leanne Brown's Good and Cheap Eat Well on $4/Day cookbook. The curriculum consists of three sessions. The first is basic nutrition instruction in an informal setting. The second class is interactive, hands-on training, preparation of a simple dish, selection of a menu and making a grocery list. The third and final session is co-op preparation of a well-balanced meal, using the chosen menu and recipes from the Good and Cheap cookbook. Participants receive a gift bag, cookbook and a $15 food voucher.
